Weekly (No Cook) Dinner Menu 6/15-6/19

There’s a theme for this week’s menu.  It’s the “no cook” dinner menu.  I mentioned last week that I have been feeling tired.  I swear I have   doubled in size the last few weeks.  I feel huge.  And hot.  Huge, hot and tired.  That about sums it up.  I decided to create a weekly dinner menu that is super easy.  I don’t want to turn on the oven or grill. It’s supposed to be a hot and stormy week so I’m keeping it simple.  

I will do a little meal prep for the week.  I plan to make a batch of pimento cheese (so excited!), homemade salsa and marinated chickpeas, all of which can be eaten at lunch or dinner.  Come dinnertime each night, I just want to take things out of the fridge and assemble. We have strawberries and watermelon for desserts.  Oh, and I picked up a pint of Graeter’s mint chocolate chip. 🙂  

Monday – Roast beef and cheddar roll-ups (with spinach and horseradish cream cheese sauce) and broccoli on the side.


Tuesday – Tapas Plate


Wednesday – Slow Cooker Chicken Burrito Bowls and chips with homemade salsa


Thursday – Veggie and bacon sandwiches and chips


Friday – OFF
